Though it it from WebMd, a fairly large health article site, this article uses a source from Proceedings of the National Academy of sciences. It cites that human blood cells immediately began producing hydrogen sulfide after receiving garlic. Hydrogen sulfide has been known to relax blood vessels and increase vital blood flow.

This is an article from The Economist back in 2003. I like that it specifically addresses the question of heredity vs. diet, however I wish there was more links to the sources. I found a really great looking article here (http://journals.lww.com/amjmedsci/Citation/1958/03000/Relative_Significance_of_Heredity,_Diet_and.3.aspx) from the The American Journal of Medical Sciences but without subscribing to the journal or purchasing the article, I could not access the entire thing.
